Virtual Vacation: Let's Go to the Beach

I don’t know about you, but I am ready for summer. Our weather here in Missouri has been a roller coaster as of late. We have seen daytime highs hit 90 degrees only to see a daytime high of 45 degrees just a few days later. I am ready for summer and warm weather. This got me thinking… how about a virtual trip to the beach this week?

We’ll provide the recipes, the beach, and even the Zoom backgrounds.



 Cocktails

 One of the first things that many of our clients enjoy when they arrive at a beach resort is enjoying a welcome cocktail. We hope these recipes from our friends at Grand FiestaAmericana Los Cabos inspire your next tropical drink. 


Grand Paloma

2 oz Tequila Reposado

1 oz grapefruit juice

1 oz lime juice

1 oz orange juice

2 oz grapefruit soda

1 dash of Damiana liquor on top (if you have it)

Garnish with lime, grapefruit and orange wedges


Strawberry Mango Mezcal Cocktail

2 oz white tequila

3 oz fresh mango puree

5 oz lime juice

1 oz Contreau

Fresh Strawberries

Tajin powder


How about a snack to go with that tropical drink? One of my personal favorite things from when I stayed at Iberostar Playa Mita near Puerto Vallarta a few years back was the guacamole made fresh daily with tortilla chips.


Guacamole

  • 3 avocados, ripe
  • 1/2 small onion, finely diced
  • 2 Roma tomatoes, diced
  • 3 tbsp, fresh cilantro, chopped
  • 1 jalapeno pepper, seeds removed and finely diced
  • 2 garlic cloves, minced
  • 1 lime, juiced
  • 1/2 tsp sea salt
 Instructions

  • Slice the avocados in half, remove the pit and skin and place in a mixing bowl.  
  • Mash the avocado with a fork and make it as chunky or smooth as you'd like.
  • Add the remaining ingredients and stir together.

Now that you have your drink and a snack you are ready to kick back and relax with the sights and sounds of the ocean:
